I am so excited to share a look at the prettiest Brunch I whipped up for the girls to welcome in Spring. On the menu was light fare of Strawberry Bellinis, Spinach Salads topped with watermelon radishes, Laduree Macarons, and Cake Pops with the sweetest pink flower on top.
I love entertaining on our patio while the weather is still fresh; I set up the display on our coffee table so the girls could enjoy the brunch leisurely on our couches with small plates. The true hit of the party were the Bellinis – so fresh and refreshing – that I had to share the recipe today!!
Strawberry Bellinis
Ingredients:
- 1 pint strawberries
- 2 tablespoons simple syrup: Bring 2 parts sugar and 2 parts water to a boil. Simmer until the sugar dissolves. Remove from the heat and allow to cool.
- Champagne or Prosecco
Instructions:
Place strawberries and simple syrup into a blender. Strain strawberry mixture. Pour into glasses and top with Champagne.
Hostess Tip
Serve your Bellinis in champagne flutes for an elegant look. Place extra Bellini Mix in a crystal pitcher (I even used pink ribbon to dress up my pitcher). Serve your Bellinis alongside a pink menu – hence why I chose radish salad and macarons. The more pink cake stands and glasses the better!! Cheers!
