Just last week I was featured on the Glitter Guide for a fun and easy Valentine’s Day activity… hosting a cookie decorating party {see the post here}. What I love about this idea is that it makes for a perfect night in whether you plan to spend it with your man or with your girlfriends. What I didn’t share in the post were my favorite recipes for chocolate cookies and home-made frosting so I wanted to take this opportunity to divulge. My go-to ‘made from scratch’ cookie recipe is from Cooking Light {and don’t worry, it doesn’t taste like it!} while the frosting is Betty Crocker {to be honest I was shocked they revealed the recipe on their site!}. Then all you need to make it Valentine’s Day perfect is gather an array of pink, red, and gold sprinkles! See single gals, Valentine’s Day ain’t so bad after all!!
Cooking Light Healthy Chocolate Chip Cookies Recipe
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup packed brown sugar
- 3/4 cup granulated sugar
- 1/2 cup butter, softened {I use “I can’t believe its not Butter”}
- 1 teaspoon vanilla extract
- 2 large egg whites
- 3/4 cup semisweet chocolate chips or Dark Chocolate Chips
- Pam Cooking spray
Directions:
Preheat oven to 350°. Combine flour, baking soda, and salt, stirring with a whisk. Combine sugars and butter in a large bowl; beat with a mixer at medium speed until well blended. Add vanilla and egg whites; beat 1 minute. Add flour mixture and chips; beat until blended. Spray baking sheets with cooking spray and place dough balls. Bake at 350° for 10 minutes or until lightly browned. Cool on pans for 2 minutes then transfer to cooling rack.
Betty Crocker Vanilla Buttercream Frosting Recipe
Ingredients:
- 3 cups powdered sugar
- 1/3 cup butter, softened
- 1 1/2 teaspoons vanilla
- 1 to 2 tablespoons milk
In a medium bowl, mix powdered sugar and butter with electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. Once cookies have cooled, frost, sprinkle, enjoy!
