I am not usually one to put fruit in my salads, but with my recent overwhelming sweet tooth {thanks pregnancy!} I was hoping to satisfy it with something other than dessert! And what I especially love about this specific recipe is that while most salads with cheese and nuts are on the fattening side, this one you can sit back and enjoy without worrying because it’s a simple {low-cal} Balsamic Vinegar dressing! *Added perk: I also recommend this recipe for kids! The combo of bright colors, fruit, and sweet taste really distract from the whole ‘salad’ idea! So for whoever your guests may be, I hope you enjoy this easy mix!!
Strawberry and Shredded Mozzarella Salad Ingredients:
- 1 head of romaine lettuce
- 2 cups of chopped strawberries
- 2 cups of chopped mushrooms
- 1 cup of chopped basil
- 1 cup sliced almonds
- 4 tablespoons of Balsamic Vinegar {or one per person}
Strawberry and Shredded Mozzarella Salad Instructions:
- Wash and dry lettuce, then chop and place in a large mixing bowl
- Chop remaining fruits, veggies, and nuts {or buy pre-sliced almonds} and place in the bowl
- Top with Balsamic Vinegar and mix with salad tongs
- Add salt and pepper to taste
- Serve!
