Strawberry & Chia Seed Breakfast Parfaits


Over the summer I find I am hosting tons of brunches… mostly with other families and close friends. I am always looking for healthy and fun alternatives to serve, so today I wanted to share one I am loving!

I am obsessed with chia seeds (they are full of fiber, antioxidants, iron, and calcium), so I wanted to make breakfast parfait item I knew both parents and kids would find appealing. These strawberry chia pudding cups are made with coconut milk, honey, and vanilla, so they are incredibly healthy; and my favorite item on the ingredients list is the topping of coconut chips! They are a favorite garnish of mine which I recommend adding to your morning yogurt or acas bowl daily! For a perfect party sized serving, I served my pudding cups in small juice glasses {these to be exact}.

Strawberry & Chia Seed Parfait Recipe:

Note: they require 4 hours refrigeration before serving!!

Ingredients {fills 6-8 small juice glasses}:

  • 6 large strawberries
  • 1/2 can (6.5 ounces) of coconut milk
  • 1/2 can of water (use the same coconut milk can)
  • pinch of salt
  • 1-2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/3 cup chia seeds
  • fresh chopped strawberries and coconut chips for garnish

Instructions:

  1. In a blender, combine strawberries, coconut milk, water, honey and vanilla on high until smooth
  2. Pour mixture on top of chia seeds in a medium sized bowl
  3. Whisk thoroughly.
  4. Let stand for 10 minutes on counter, then refrigerate for at least 4 hours to let pudding firm up
  5. Whisk again upon serving, adding a little extra liquid if needed
  6. Top with garnishes and enjoy!
