Pretty Ways to Serve Healthy Fruit Dishes

While pastries and pancakes are the usual go-to’s for hosting Sunday brunches, come summertime I prefer to serve some healthier options for guests, of course keeping presentation at the top of my priority list. So today I wanted to share three easy and yummy ideas that will have your guests smiling {and thanking you for keeping their bikini bods in tact!}. Oh, and these aren’t just for adults, they are chid taste-tested and approved!

On the menu: 1. A tray of Berry Coconut Milk Smoothies, 2. Fruit Parfaits served in Mason Jars {also great to take to-go for a picnic!}, and 3. Home-Made Acai Bowls with all the essential toppings! Read on for the recipes!

My Berry Coconut Milk Smoothies are packed with antioxidants and have a delicious and refreshing flavor thanks to the Coconut milk!

What you need to make my smoothie {serves 4-6 depending on glass size}:

    1. 110-ounce bag frozen blueberries
    2. ripe bananas
    3. cup plain yogurt
    4. cup unsweetened coconut milk
    5. tablespoons honey

In a blender puree the blueberries, bananas, yogurt, coconut milk, and honey. Serve!

I served mine in these Bed Bath and Beyond Glasses {the smaller size}… and how pretty do they looked served over top a bright napkin?! See the matching runner here!

Next up my Fruit Parfaits which I stacked high in mason jars! Really there is no secret here… it’s just fun a fun way to serve a fruit salad rather than the “go-to” large fruit bowl where everything gets relatively soggy!

These are also great as I mentioned above, for taking to-go. Want to get super fancy? Serve with a long milkshake spoon! Or a gold fork is just as fab!

Last but not least is an Acai Bowl, or for a Party, a DIY Acai Bowl Bar with delicious toppings!! Everyone has heard of the trend and they are incredibly easy to make at home. The only tick is making them as guests arrive because they do melt fast!!

How to make my favorite ACAI Bowl {make 2-4 small bowls}:

  • 1/2 small banana
  • 1 100-g (3.5-oz) pack frozen unsweetened acai berry pulp (TRY: Sambazon Unsweetened Acai Smoothie Pack}
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen blueberries
  • 1/2 cup unsweetened vanilla almond milk

By the way, I love the other ACAI ideas on this Clean Eating site!!

Trendy toppings include blueberries, bananas, chia seeds or flax seeds and coconut shavings!! How cute are these tiny bowls so everyone can take their individual toppings?!

I hope these healthy options have inspired some yummy brunches ahead!!
