The Prettiest & Healthiest Brunch Display

I love hosting brunch, so today I wanted to share a look at the prettiest mix of goodies I served up at my latest breakfast soirée. Perfect for a Sunday brunch with friends or delicious ideas for a special occasion! The menu is almost too pretty to eat… the keyword being ALMOST!
Starting with these homemade yogurt-filled granola cups, which I served on a white cake stand. Way more fun than small bowls of yogurt, these cups are the perfect mix of smooth and crunch, and can be super healthy if you fill with low fat yogurt! Top your finished product with colorful sliced fruit and you have an adorable bite-sized treat! Oh and be sure to make them in a mini muffin tin for the perfect serving size!
Homemade Granola Cups Recipe:
Ingredients {serves 6-8 mini yogurt cups}
- 1 1/4 cups of quick cooking oats
- 1/4 cup of unsweetened applesauce
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- cooking spray
- fruit of choice
Instructions
- Preheat oven to 350 degrees. Add the oats, applesauce, honey, chia seeds, cinnamon and salt to a bowl and mix until combined.
- Spray mini muffin tin with cooking spray.
- Evenly disperse the mixture in 6 muffin tins.
- Use your fingers or a spoon to press the mixture into the sides and base of the muffin tin.
- Bake for 12-13 minutes.
- Let it cool in the muffin tin for about 10 minutes before using a butter knife to remove the oatmeal cups.
- Let the cups cool completely before filling with yogurt and topping with fresh selection of fruits.
Next up is a refreshing cocktail which is as appealing in color as it is in taste! These grapefruit basil mimosas are a perfectly ‘unique’ brunch drink and incredibly light and refreshing. Combine the ingredients below in a glass pitcher, mix, and then serve in champagne flutes or wine glasses with a basil leaf garnish. I served mine in these white wine glasses.
Grapefruit Basil Mimosas Recipe:
Ingredients {makes 1 pitcher – serve 4-6 glasses}:
- 750 ml bottle Prosecco or any sparkling white wine or Champagne
- 2 cups pink grapefruit juice
- 3 tbsp Triple Sec
- 1 Basil Leaf
- 1 Grapefruit Slice for Garnish
Then I am obsessed with chia seeds, so a yummy chia seed recipe was a must on the menu. These strawberry chia pudding cups are made with coconut milk, honey, and vanilla, so they are incredibly healthy! My favorite item on the ingredients list though is the topping of coconut chips! They are a favorite garnish of mine which I recommend adding to your morning yogurt or acai bowl! For a perfect party sized serving, I served my pudding cups in small juice glasses {these to be exact}.
Strawberry Chia Pudding Cups Recipe: {*Note: they require 4 hours refrigeration before serving!!}
Ingredients {fills 6-8 small juice glasses}:
- 6 large strawberries
- 1/2 can (6.5 ounces) of coconut milk
- 1/2 can of water (use the same coconut milk can)
- pinch of salt
- 1-2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/3 cup chia seeds
- fresh chopped strawberries and coconut chips for garnish
Instructions:
- In a blender, combine strawberries, coconut milk, water, honey and vanilla on high until smooth
- Pour mixture on top of chia seeds in a medium sized bowl
- Whisk thoroughly.
- Let stand for 10 minutes on counter, then refrigerate for at least 4 hours to let pudding firm up
- Whisk again upon serving, adding a little extra liquid if needed
- Top with garnishes and enjoy!
Then of course there are the pretty details that surround these recipes which are equally as important in creating the perfect brunch ambiance, starting with this fun sign! This “Aint No Party Like a Champagne Party” sign is an Etsy find {here} which I framed in a 14″x18″ gold frame {here}. Then for display, I divided each of my food items by placing them on separate 16″ rectangular gold-rimmed trays {they are a great size and I entertain with them all the time!!}. These tray are a perfect match to the salad plates I used to serve my brunch foods, the Oliver & Olivia gold-rimmed plates from Bed Bath and Beyond {here}! Lastly, everyone has been asking about these beautiful vases… and while I don’t know the exact sources, I have a few similar delicate options to recommend and shop below {see similar here, here, and here!}.
