I have had exposure to gluten free diets and recipes at NYC bakeries and restaurants, but admittedly I had never really brought the concept to my own kitchen until I was given the Book Gluten Free ‘Mediterranean’ Gourmet Cuisine by Aslıhan Koruyan Sabancı. I began browsing the book and realized that the book wasn’t just for people with gluten sensitivity. It was actually a great book of recipes for anyone who loves Mediterranean or Aegean cuisines and wants a healthy diet. I especially loved that at the bottom of each recipe she included a Nutrient Value and Weight chart, making it extra perfect for your family health nut.
For dinner I chose to make ‘Sesame Chicken’ which I knew would be a crowd pleaser, especially for my husband.
Gluten Free Sesame Chicken Ingredients:
- 3 chicken breasts {I chose hormone free organic chicken}
- 1 banana pepper
- 1 red pepper
- 1 small orange
- 2 tablespoons sesame seeds
- 2 tablespoons wheat free soy sauce
- 1 garlic clove {I opted out of this!}
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 3 tablespoons olive oil
Gluten Free Sesame Chicken Directions:
- Chop the chicken breasts into cubes. Cook with olive oil, sliced garlic, garlic powder, salt, sesame seeds, and soy sauce.
- Chop the colored peppers into large cubes, add to the chicken and stir for a few minutes. Distribute to serving plates.
- Top with peeled sliced oranges and serve. {I added a little bit of parsley too for color!}
