Fresh & Savory Summer Salad

I always like to make a big salad when entertaining, whether it’s to enjoy over lunch by the pool or to serve alongside a cheese board while enjoying light bites with friends. While I love salads rich in veggies, I was craving something a bit more savory this time around and I was excited to find some unique meat and cheeses to incorporate into the mix. My goal was to to merge my love of cheese boards and salads, and voila, my new go-to summer salad was born. Hope you enjoy the recipe!!

I was recently introduced to Prosciutto di San Daniele – a delicious Prosciutto from Italy. I love that Prosciutto di San Daniele is a completely natural product, made only with Italian pork and sea salt, and I loved the idea of using this as my protein as opposed to the normal go-to’s of chicken and fish. Equally as important, I love that it not only tastes decadent but looks it as well.

My salad recipe is simple…. I started with arugula as my base and chopped multi-colored cherry tomatoes on top, then I adedd Prosciutto di San Daniele, a rich and flavorful cheese (called Grana Padano – also from Italy – a hard and crumbly-textured cheese), topped it with olive oil, balsamic vinegar, and pepper, and then brought in my secret ingredient, basil!

This salad is the perfect mix of light and savory, and layered in rows…. first the arugula topped with tomatoes, than the prosciutto, next the cheese, and then the arugula mix again… it looks so chic!!
