Spring Party Menu


When it comes to my Spring parties I am all about a healthier and lighter fare. As you saw in a recent tablescape, I created a juice bar, a delicious cheese platter, and healthy crackers rather than bread. So this party {see the table to compliment}, I decided to make create a tiered cheese platter {which takes the presentation to new heights – literally!!} and a delicious quinoa salad with a few unexpected ingredients!

Ok so let’s start with the salad. A huge Spring trend is styling your salad like above. Rather than mixing all of your ingredients together, show guests everything the salad has inside by topping the salad with ingredients, and diving them on top into perfect pizza slices. Here I filled my salad bowl with a base of chopped kale, and for my toppings chose feta, organic avocado, whole wheat quinoa, unsalted cashews, and blueberries. For you perfectionists out there, place a knife to create a straight line, and fill. We simply eyeballed it though and it came out pretty well. Leave the salad dressing on the side so ingredients don’t get soggy. Once guests have seen the presentation, begin to toss. The recipe we followed was this Kale Superfood Salad recipe!

My cheese board is bigger and better than ever thanks to a tiered serving tray. First of all I love that it’s wood, giving it that outdoorsy rustic vibe, and secondly, I love how you can make each tier its own vibe!

How to assemble: make sure each tier has a cheese, a protein {salami or prosciutto or diced turkey}, a starch {crackers or breadsticks}, and then mix in bowls of nuts, dried fruits and olives in any empty space. To add stability to slippery crackers, place basil leaves beneath! A good rule of thumb: Place your messiest cheeses that require cutting on the bottom for better stability, and smaller {ideally cubed or sliced} cheeses that don’t require cutting, on the top levels.
