Kale + Fruit Summer Smoothie

Ever since I got a Vitamixx blender for the FHH for Father’s Day, our household has gone smoothie crazy. Whether it’s for an early morning metabolism boost, a post-workout protein shake, or simply an afternoon snack, we have experimented with all sorts of amazing recipes. One that I am really obsessed with is what I am coining the “FH Kale + Fruit Summer Smoothie.” I have always been afraid of adding kale to my smoothies in the past because I worried that it would mask the delicious fruity taste, but it actually is quite the opposite. If blended enough, you forget you are getting greens all together. And since you know my obsession with mango from my Chicken Mango Curry Couscous recipe, I had to add this seasonal summer fruit into the mix as well. Another bonus to this recipe — while I used fresh blueberries and mangos, you can easily replace fresh for frozen ones from the store. I definitely recommend going the frozen route if you don’t use a lot of fruit at home and are worried about spoiling.

FH Kale + Fruit Summer Smoothie Ingredients {serves 1}:

  • 3 ice cubes
  • 1 cup of chopped kale
  • 3/4 cup chopped mango
  • 3/4 cup blueberries
  • 1/2 banana
  • 1 tablespoon Flax Seed
  • 1.5 cups Almond Milk

FH Kale + Fruit Summer Directions:

Add all of your ingredients to your blender. Blend. Serve! (If too thick, add more almond milk or water to dilute, then re-blend.)
