Spring Greens Salad with Honey Vinaigrette

I am so excited to have been featured in the Food Network Magazine April 2016 Issue sharing a yummy recipe for Spring! Golden Honey Vinaigrette with Spring Greens {serves 4}:
Ingredients:
- 3 tablespoons of honey
- 1/4 cup white balsamic or white wine vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 extra virgin olive oil
- pinch of salt and pepper
- 1 head of Boston or butter lettuc
- 1 cup baby swiss chard
- 2 cups pea shoots
- 1 cup snap peas
- 1/2 cup lima beans
- 1/2 cup thinly sliced summer squash
- 1/4 cup crumbled goat cheese
- 2 tablespoons flat-leaf parsley, chopped
Directions:
To make vinaigrette, whisk together the honey, vinegar, Dijon mustard, salt, pepper, and olive oil until completely combined. Set aside
To make the salad, tear lettuce into pieces and mix in a bowl with Swiss chard, pea shoots, peas, lima beans, summer squash, and goat cheese. Sprinkle with parsley and serve with vinaigrette.
