Well folks, my #EatFreshChallenge with Cooking Planit and Colavita is coming to a close. It’s been so much fun trying new recipes and I have a new found confidence in the kitchen. Truly the happiest people from this challenge though are my husband and Reese who have licked their plates clean each night! I am definitely excited to start mixing up my cuisines at future FH dinner tables.

Speaking of new products… Today’s photos captured my favorite meal of Week 3, a yummy lunch salad I made called the Corn, Arugula, and Radish Salad. I rarely make my own salad dressing so I was excited to try this out. I made it from Colavita Olive Oil, Agave and fresh lime juice, and although the recipe didn’t call for it, I threw in a little Colavita White Balsamic Vinegar {because I had never tried it before}, and it was really delish!
