Summer Lunch

Since the FHB has an early bedtime, I love having people over for lunch on the weekends rather than for dinner. Two of my favorite things to make {which are crowd pleasers for guests of all ages} are a long turkey baguette sandwich and Caprese Salad {which is tomato mozzarella}. They are incredibly easy and the presentation is just fancy enough to make lunch feel unique. The perfect finishing touch are home-made menu cards so guests know exactly what they are digging into {check out when I served them at my Moms Who Lunch Event}! 

Here is what you need to bring this lunch to life (serves 4-6):

Turkey Baguette:

  • 1 whole wheat french baguette
  • low fat mayo
  • American mustard
  • 2 lbs fresh sliced turkey (or deli turkey)
  • 2 tomatoes (sliced)
  • 2 cups of lettuce (mixed greens)
  •  salt & pepper

Instructions: Cut your baguette in half and place in the oven for about 5 minutes on 350 degrees fahrenheit (just enough to get it warm and lightly toasted). Lather up mustard on one side, mayo on the other, layer on your ingredients. Slice in small pieces on the diagonal. Serve.

Caprese Salad:

  •  4 large tomatoes
  • 1 large mozzarella
  • 1 fresh bunch of basil
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • salt and pepper to taste

Instructions: Slice your tomatoes and lay them on your serving platter. Slice your mozzarella and cover each of the tomatoes. Break apart your basil and lay one large leaf on top of each tomato mozzarella sandwich. Sprinkle with oil, vinegar, salt and pepper. Enjoy.
