Summer Corn Salad

Nothing screams outdoor entertaining like a yummy corn on the cob, but I cannot tell you how many of my guests politely says “No Thanks!” because they hate getting corn in their teeth! While I have contemplated serving Floss alongside my corn stalks, I decided a friendlier version would be to incorporate this yummy veggie into an easy chewing Summer Corn Salad. I made this recipe for a party last summer and it was a delicious success! The light lemon dressing makes it so refreshing, and best of all, it’s incredibly simple! Enjoy!

Recipe for Summer Corn Salad //

Summer Corn Salad Ingredients:

  • 4 cups of corn off the cob
  • 2 large tomatoes, finely chopped
  • 1/2 small onion, finely chopped
  • 1/2 orange pepper, finely chopped
  • 1 can sweet peas, strained
  • 2 Tablespoons fresh basil, minced
  • 1 Tablespoons fresh cilantro, minced
  • 2 Tablespoons of Olive Oil
  • 1 whole Lemon juice squeezed for lemon juice
  • salt and pepper to taste

{Note: Depending on how much time you have you can create this salad from fresh, frozen, or canned ingredients. I actually purchased several of the pre-chopped veggies from Whole Foods to assemble mine!}


  • Combine ingredients. Garnish with extra cilantro. Serve.
